Charred Corn Salad

I can't really remember what life was like before we purchased our much loved Weber Genesis BBQ... I must have spent significantly longer preparing dinner each night as now it really is my "go to" cooking tool when I want to get dinner on the table asap.
So in order to make the most of being able to have a steak cooked in a few minutes, I now am always on the look out for some quick and tasty salad ideas to accompany the steak. This is definitely a favourite of mine as it certainly packs a flavoursome punch.

Charred Corn Salad




2 corn cobs
2 tomatoes
1 handful basil leaves roughly torn
75g flaked almonds
1/2 tablespoon red wine vinegar
1 tablespoon EVO


Remove the husks from the corn cobs, wrap them in glad wrap and microwave on high for three minutes

Brush the corn cobs with some olive oil, then place on a hot barbeque, turning every 2 minutes so that they are lightly charred on each side

Toast the flaked almonds in a dry pan until golden brown

Dice the tomatoes and slice the corn from the cob

Combine & toss all ingredients and season with salt and pepper to taste

Serve with a delicious BBQ'd steak
