Yes yes, I know pulled pork has been and gone as a food fad... but the truth is I love it too much to just ditch it from my repertoire. And as Mr SC has just declared pulled pork as being one of his all time top 3 dishes and on the short list for what he wishes for his birthday meal later in the month, it looks like I will be coming back to this recipe again in a few weeks time.
Pulled Pork
800g Pork Shoulder or Neck
1 tablespoon Salt
1 tablespoon Brown Sugar
2 teaspoons Smoked Paprika
Preheat fan forced oven to 220 degrees Celsius
Rub half the salt, sugar and paprika into the pork
Place the pork on a large sheet of Aluminium Foil on a baking tray and place in the oven 30 minutes
Remove the pork from the oven, turn the oven down to 130 degree Celsius
Wrap the pork up so that it is enclosed in the aluminium foil and return to the oven for 3 hours
After 3 hours, turn the oven off but leave the pork in there for another hour or two to continue cooking, resting and cooling
Remove from the oven and using a fork gently pull into shreds
Put the pork, remaining salt, sugar, paprika and any baking juices into an airtight container and store in the fridge overnight allowing the flavours to further infuse
Before serving preheat the fan forced oven and grill to 180 degrees Celsius
Spread out the pulled pork onto a baking tray and return to oven for 5 - 10 minutes or until warmed through and with some crunchy bits
I served my pulled pork as an open sandwich
Pulled Pork Open Sandwich
1 grated Carrot
1/2 avocado
2 tablespoons mayonnaise
1 teaspoon grainy mustard
1 small chilli finely sliced diced
1/2 lemon
Toasted Ciabatta
Combine the mayonnaise, mustard, chilli and juice of half a lemon
Spread the mayonnaise mix on the ciabatta, add a few slices of avocado and some grated carrot
Top with the warm pulled pork and enjoy

... did your pork come with some skin on it? If yes then:
remove the skin from the meat
rinse the skin under cold water and pat dry
score the skin in centimetre intervals using a Stanley knife
pour a splash of olive oil onto the skin and salt liberally
rub the salt and oil into the skin
place the skin on a piece of aluminium foil and place in the oven when you first add the pork at 220 degrees Celsius
remove the skin when you remove the pork after half an hour
the skin should be perfectly golden brown and crunchy
Enjoy immediately!
this delicious treat should give you the patience to wait until tomorrow before eating the pulled pork :)
